I heard somewhere that an Academic version of Office 2003
can be installed on up to 3 computers. Is this true?

No. The Students and Teachers Edition (which is available from all good
software stores) has a 3-licence EULA; the Academic versions (such as you
might purchase from a university bookstore) are subject to the same
restrictions as any regular retail licence (one desktop and one laptop,
providing they are not in simultaneous use).
