2007 Tasks Custom Priority and Status Fields: How To Use?

I feel like I've looked *everywhere* and still can't find any information on
the Outlook 2007 Tasks Custom Priority and Custom Status fields. They're
shown in the Fields list in the Customize Current View dialog box, and they
appear in my view when I select them, but they don't seem to want me to enter
anything in them. Anybody know what's up with these things?
