Escape. And sometimes, typing the first letter of the button name will also
work, but this is not as reliable as Esc for cancel.

Command-Period (particularly in apps that were around in the "old" days)
also works in some apps.

I am so very bitter that cmd-period no longer reliably cancels whatever is
happening. Especially when it doesn't cancel stuff in the OS like printing.
