Ability to change color scheme in office 2007

I would like to see the ability to change the color scheme in Office 2007 as
the default blue color scheme bugs me.

In Excel, click on the Office logo in the top left hand corner and you will
get a menu that has an "Excel Options" button on it. Click on that and you
will get a dialog box where you can choose the "Color Scheme". The only other
option appears to be Windows Vista (gray) but it's much better than the blue.
Changing it here will change it for all apps.

do you have to start powerpoint to find the excel start icon?

You can change it from any of the applications. Open a program, click the
round button at the upper left, and then select <program name> Options.
