Does the book deal with the interface? Or the concepts and code?
The interface in A2007 is completely different: no menus and toolbars;
ribbon instead. But under the surface, there are still tables, queries,
forms and reports.
Here's a bit of a rundown on what's different in A2007:

I'd say it also depends on your level of familiarity with Access and
relational databases in general. If you aren't familiar with the
concept of relational databases, the version of Access that the book
covers will not change the concepts that it teaches when it comes to
the theories and practices for relational databases. If all you are
looking for is how to use the Access interface, then yes, there will
be quite a few changes between 2003 and 2007. If you are looking to
learn how to use VBA as a development tool, not much has changed in
that area.
