Add and subsubstract stop working, why?

What is the work around, if there is one?
At this point I usually go back and start over, with a spread sheet from a
month ago.

Is there a way to get a non adding spread sheet to work again?

Check calculation under Tools>options...>calculation is set to automatic

Also, if the above is ok, then I suspect that the numbers you are trying are
actually stored as text. (This often happens with imported data). You can
enter a 1 in a blank cell, copy it, highlight your number constants. (NOT
formulae) and select Edit>Paste special...>Values and multiply

This should fix it
