Adding a Date function to a Template

I'm using Word 2000. I have a template for a personal letter and I've
included a date function. I did so by going to Insert -> Date and Time and
selecting the format I wanted. There is a check box at the bottom which, if
checked, will automatically update the date. I have not checked it.
Nevertheless, every time I open a letter written with this template, the date
shown is the current date.

How do I get it to keep the date the same as the day I wrote the letter?

Open the template as a document (via File | Open). Press Alt+F9 to show
field codes; you'll see { DATE } or { TIME } instead of the problematic
date. Change the field to a CREATEDATE field, and press F9 to update. Press
Alt+F9 again to hide field codes. Save and close the template file. Repeat
this procedure to change the field in existing documents.

The reason is that you have inserted a date field which shows the system
date. What you need to do is change those date fields for createdate
fields - ALT+F9 change {DATE \@ "d MMM yyyy"}or {TIME \@ "d MMM yyyy"} to
{CREATEDATE \@ "d MMM yyyy"} then F9 and ALT+F9 - and change the date in
your letterhead template so that future letters based on it show the correct
dates. The switches \@ "d MMM yyyy" may be different at your location.
