Address Book view "Last Modified," Signature defaults

I just switched from Outlook 2003 on a Thinkpad to Entourage 2008 on a MacBook. Two features in Outlook 03 that were very useful seem to be missing from Entourage 2008; at least I and some others more technically versed than I cannot find them; they aren't in the menus most analagous to Outlook 2003.
One feature is the ability to view the Address Book by last modified. Since I work most frequently with the newest entries, this saves a lot of time.
Second was the ability to have a default signature that would pop up automatically every time I created a new message, or replied or forwarded a message.
Any guidance on how to locate the menus for these features would be greatly appreciated.
All the best,
TrenchCoat

For your second item, look up "default signature" in Entourage Help on the
Help menu.

I don't know about the first. I'm using Entourage 2004, which does not
record the date of update for Contacts, so the only way to do it would be to
put the date in manually, e.g., into Custom Date 1, each time you add or
modify a contact. Sounds error-prone. Maybe E 2008 has a way, however.

Outlook 2003 did record the date of an update of an entry in Contacts. It never was a columnar possibility but "Last Modified" was a sorting choice when viewing. Not in Entourage 2008 though I suspect the data still is recorded somewhere -- and might be the basis of a sort of the data. As to "default signature," there is no Help entry that comes up when searching on that character string.
Any more ideas? Suggestions welcome

A bit more: In Outlook 2003 in Contacts, the View pulldown menu gives "Arrange By" as an option. Under "Arrange by" is Date. Trigger this and you get your contacts arranged by last date modified. In Entourage 2008 Address Book, under the View Menu, there is an "Arrange By" option but it isn't highlighed and so is inactive. It DOES become active in Mail, however; not that this does any good for looking at the entries in Address Book.

One feature is the ability to view the Address Book by last modified. Since I
work most frequently with the newest entries, this saves a lot of time.

Under View in the Menu bar, select Columns. You can select the column Last
Correspondence. Click on this column after it's added to sort by that date.
You can toggle oldest/newest by clicking on the column.

Entourage will autofill addresses when you start typing in the name. If you
can explain with "work most frequently with the newest entries" we might be
able to explain other options. I don't get what you are trying to do.

Second was the ability to have a default signature that would pop up
automatically every time I created a new message, or replied or forwarded a
message.

In your Account window --> Options tab.

Cheers and Welcome to Mac! I have a few tips and links posted to help new
users here:

Did you choose "Entourage Help" from the Help menu before searching for
default signature? It shows up in Entourage 2004 just fine, and I'd be
astonished if it didn't show up in 2008 as well!

Entourage is not Outlook. You need to learn how to use the features in
Entourage.

You can search in the Address Book using the top search box (it uses
Spotlight), you can use the simple find search box to search by name,
category, company, project, or you can use a custom view.

on that character string.

Did you search Entourage Help, or in the top search box which is Apple Help?
I found the following by typing in signature in Entourage 2008 help:

Set the default signature
On the Tools menu, click Accounts, and then click the Mail tab.
Double-click the account that you want to set a default signature for.
Click the Options tab.
Do one of the following:
To
Do this
Select a single default signature
Under Message Options, in the Default signature pop-up window, click a
signature.
Use signatures from your random list
Under Message Options, on the Default signature pop-up menu, click Random.
