Select a .doc file in the Finder. Select Get Info from the File menu (or
press cmd-i). Under "Open with" select Microsoft Word from the drop-down
list. Select the button labeled "Change All...". From then on, all .doc
files should open with Word.

Similarly, pick an Excel document to open with Microsoft Excel and select
Change All.

Hope this helps.

If that doesn't work, then if these are downloaded files, or
attachments, that you are trying to open, this may explain your problem.

You are getting the galleries because Word/XL are launching, but not
opening your document. You can also turn off the galleries at launch in
application Preferences.
