Hello,

I have deleted a custom field from my custom form. This field is in the
many tasks that already exist. Then when in design view, I delete the field
from the All Fields tab as well.

Then I open an existing task and save and close it. The field that I
deleted still has a value assigned to the task. I know this because it
shows up in one of the columns in the table view.

Why is this? Basically, my goal to delete and clear out unused fields
completely from exisiting tasks and new tasks.

You would have to delete the field from each item that contains data for that property. Deleting it from the form doesn't remove it from individual items that were previously created with that form.
