How do I begin new WORD documents in plain text without being underlined and in bold? I can't seem to change the settings

Most likely you've somehow managed to add those attributes to your Normal
paragraph style.

In a new blank document go to the Formatting Palette - Styles group, click
the arrow button at the right end of Normal [Current style of selected
text], then select the Modify Style command. Remove the Bold & Underline
attributes, click the Add to Template button then OK.

You could do the same thing by pointing to the Normal style in the
Formatting Palette - Styles [Pick style to apply] area or in the Format>
Style> Modify dialog.
