I need a way for volunteers to be able to ADD their names and make any
changes to a calendar. I've already posted up a shared calendar onto Office
online using Outlook 2007. Now i just need the volunteers to put their own
names in the slots of time in which they can volunteer. Anyone know how i can
do this?

Give them permission to write to the calendar.

office online is editable only by the calendar owner. you'll need to use a
different solution.
