How do I create a 3-column document that automatically alphabatizes when a
new name is added?

Use the Sorting and Grouping dialog to sort on the last name.

Will this work if I need to put three colums on each sheet so that when it
is printed I will be utilizing a whole sheet of paper?

It should.

You set the columns on the Columns tab under File | Page Setup while the
report's open in Design view.
