Assign Key to Existing Macro

When I hit Alt-F8, I see a list of macros that I can run, but how do I
assign a keystroke to one of those existing macros, so I don't have to
select it and run it everytime I want to run it?

Tools > Customize, click Keyboard..., select Macros in the list on the
left, find the macro you want in the list on the right, click in the
box for "Press new shortcut key", press the combination of keys you
want to use, click Assign, then Close/OK all the way out.

Yeah, the option is not located in a particularly intuitive place. ;)

If you want to access the Customize Keyboard dialog box frequently, as
anyone beyond the novice level does, Word offers an undocumented,
built-in command that will allow you to open the dialog box with a
single keystroke. (Why they don't make this most necessary command more
accessible to users is beyond me; I think I initially discovered it by
accident.)

First, open the Customize Keyboard dialog box the usual way (Tools,
Customize, Keyboard), choose All commands in the Categories pane, and
scroll down to ToolsCustomizeKeyboard in the Commands pane. Assign a
convenient keystroke. (I use Alt+K.)
