When I receive a photo as an attachment in Outlook it is automatically saving
it to a folder named OLK8. When I click on the attachment it is NOT
prompting me to either Open or Save (I think at some stage I ticked the
option to not show this box again and from then on it is sending the photo
attachments to this OLK8).

Assuming that the picture actually opens, what is your question?

How to save to another folder?
How to re-enable the Save or Open prompt?

Not until you try to open it.

Not even when you right-click? The problem may be in your File Type
options. Open Windows Explorer, click Tools>Folder Options>File Types.
Locate the file type of the file you want to open and select it. Click
Advanced. Put a check in the "Confirm open after downloading" box.
