audio/ video settings under "tools"

where do I find instructions/definitions as to the various selections under
the menus: DEVICES, INPUTS, CODEC, FORMAT, PROFILE?

I would normally suggest searching the help, but in this case it's not too
helpful:

"If the quality of your recordings in Microsoft Office OneNote 2007 does
not meet your expectations, you can adjust the default audio and video
settings.

On the Tools menu, click Options.
In the Category list in the Options dialog box, click Audio and Video.
Select the options you want. "

So let me take a crack at answering your question.

Device - choose which installed sound card will be used when recording
audio. All of the cards you have installed should be listed here.
Input - Some cards have several inputs, both hardware and software. You
typically want to keep the "microphone" setting unless your external
microphone is plugged into the Line In jack.
Codec - Which piece of system software will process the COding and DECoding
of the input audio into digital format. You should probably keep this at
the default of whatever Windows Media codec is installed.
Format - How high of a quality of recording do you want? Higher kbps
numbers will yield higher quality recordings, but also larger files. Since
in most cases ON is processing voice data (and not music) it's OK to keep
this setting at a lower value.

For what it's worth, I've never had to change the defaults in the 5+ years
I've been using this product.
