You'll find the solution in Tools> AutoCorrect> AutoFormat As You Type -
clear the check for *Bold* and _italic_ with real formatting. You can also
leave the setting in place & use either Undo or the AutoCorrect Options
button to reverse the behavior when it occurs.
BTW, this is nothing new - Word has had this same behavior for quite some
time in both the Mac & PC versions because those characters have no real
significance in business/professional docs. The formatting aspect carries
over from previous versions of both Mac & [mostly] Windows (DOS) OS as well
as others when personal computers didn't have the graphic ability to display
bold or italic on screen

For some reason in microsoft word for mac, when I put *'s around words, the
words automatically bold themselves. I do not want this to happen. I've used
the help but I can't find what Im looking for.
Can someone tell me how to fix this?
