Auto Date/Time a Form Text Box

The form I currently have, requires users to input there StartTime for a specific task, what I would like to do is have the StartTime auto populate one minute after the last entry for that CurrentUser and Date?

I think it should be a text box that pulls from a query, but I have not had any luck.
