Auto Formatting --- unwanted results

I now seem to have a problem with this, and have no idea
how to shut it down. Whenever i click on number
paragraphs or bullet points, the WHOLE document gets
numbered, or bulleted -- if i then click on "undo", i can
get only the one bullet point etc that i want, but later
on, when i want more bullets, the same thing happens --
the whole document gets changed, and i have to
press "undo" again. What have i done?? How can i stop
this upsetting phenom??
