Auto Numbering Objects Captions

Everytime I add an object (Excel charts) into a word document I need to add a
caption. These need to be numbered in order 1,2,3 etc. However if I add the
first 2 items and add captions, THEN go back to the very begining and add a
third item, I want this item to be automatically called "item 1" (because
it's now at the begining) and the other two to be renamed "item 2" & "item 3"
respectively.

Can this be easily done

If you use the caption feature this is automatic. The numbering may not
update automatically, but it will update when you update fields (either
explicitly or by printing).
