My Outlook contacts has the full name. And the first time I use a name, plus
a couple times after that, the first, last, email (everything) displays.
It's some time after that when the first and last drop off. I think it
happens after that person sends me something. I think the autocomplete
ignores my input and pulls it from the incoming email.

I wonder if it has something to do with whether you have the name saved
in the Address book or not. Since Outlook will use the email address if
found perhaps that's what is causing some not to change to "e-mail only"

That's not something I'm doing. There doesn't seem to be a pattern to which
addresses get changed. I go about deleting the ones I don't like so it will
reassign my format. That works for a couple days, then it's back to just the
email. These email autoprompts seem to be populated from the incoming emails
instead of my outgoing ones.

Whatever you enter by typing is what is placed there. You may delete
entries, you add entries by typing and pressing enter. That's it, there
is nothing "format".

The prompts don't come from your address book nor your contacts folder. They come from an autocomplete cache that is independent from both items.

After furious head scratching, TKS_Mark asked:
