Is it possible to pre-format the automatic numbered lists
function so that the document automatically creates
numbered lists according to my own formatting rather than
the programs defaults?

Yes, but you don't want to be using automatic numbered lists. You want to be
using carefully developed styles that contain your numbering scheme.
