Automatic Resizing

I'm working on functional flowcharts where I don't know what the final size
will be. I've changed the page setup so that the page size fits the drawing
contents, but every time I reach the end of the "white" space, I have to
reopen the page setup window and click ok for it to give me more space to
work with.

Is there a way for me to get the working space to automatically expand as I
add items beyond the edge?

Alternatively, I'd really like to know if I could just work on a blank
canvas and then figure out how to fit the pages when I'm done.

You can manually change the page size by using the mouse with the control
key held down as you move close to the page edges.
