Automatic Update of Date fields

Is there a way to disable this feature? I am using Word
2000 and I have numerous documents I need to print that
have a date field that Word automatically updates. I do
not have the option to Edit, Undo to get to the original
or previous date, (it is gray in the drop down menu.)

I have already unchecked the box under Tools, AutoCorrect,
AutoText, "Show AutoComplete tip for AutoText and dates"
as suggested by my office tech support.

Any ideas?
