how do i stop excel from changing 11-6 to nov 6, 11-7 to nov 7... thank you!

It depends on how you *do* want those entries to be recognized.

If they aren't intended to be dates either pre-format the cells as Text or
type an apostrophe (') at the beginning of the entry.

If they are Dates reformat the cells with the Date formatting you prefer or
create a custom format.

Search in System Preferences for "number, date, and time formats"

Make sure yours are set correctly, because that's where Excel finds out
which date formats to expect.
