Yes, change the field type to something that is not autonumber.

Do you want to prevent your users from building databases with an
autonumber? Do you want to turn of the autonumber feature for an existing
field? Details please.
If you are referring to the Autofill mis-feature, then there is no way (that
I am aware of) to turn it off. Data entry should be done through forms where
I believe this is not a problem.
