Autotext (or similar meaning) creation

Operating System: Mac OS X 10.4 (Tiger)
Processor: intel

I used to have a Windows machine and was able to use a shortcut way of inserting a lengthy piece of text into a document. I cannot find how to do that in Word 2008

Exactly the same as in PC Word 97-2003. AutoText is the correct name of the
feature, and you'll find all the detail you need in Word Help.
