is there a way to change the coloring? like the background? so it's not all gray?

Sorry, no. You can use Help | Send Feedback in Word to let MS know you'd
like to be able to customize that.

In the meantime, you might click the green button to shrink the window,
and then you can see your desktop around it.

Since you don't specify which version of Word I can't offer any specific
details, but in general for the typically used editing views the answer is
"no".
