backing up outlook data files

What is the best way to back up my users .PST files? We have a domain setup
with user profiles and folder redirection in place. Half of my users are on
laptops. We are not using Exchange. I was thinking of using a login script to
copy the folder containing the .PSTs onto the server.

That's a good way. Another way is to supply a shortcut for Outlook that is
a batch file which first copies the PST then opens Outlook.
