Word 2008 has a bug at the moment that is causing it to display or print the
'preview' not the "real" image. This ought to be resolved soon. Word on
the PC does not suffer from this bug.
Word does indeed create a preview of some image types, for quicker display.
This is generally not the case for "raster" graphic types.
With the exception of TIFF and BMP, all raster graphics remove 'some'
information from the picture in order to make the file smaller. JPG removes
clarity to preserve colour. PNG removes colour to preserve clarity. GIF
remove much more colour and preserves the resolution.
I would have thought any kind of raster format is a poor choice for a
letter-head. Rasters can't be re-sized cleanly and easily, and they add a
lot of weight to each letter because they are bulky.
Word 2008 has had a lot of work to enable it to handle vector images. There
are still some issues. But soon, you should be able to use EPS, PDF, and
possibly, .AI. These would be much better formats for anything prepared in
Illustrator, depending on where you are going to send them.
If you are sending to PCs, stick to PDF or EMF format. Any PC can reproduce
those. EPS and .AI work well only if they have a PostScript printer, and
some of them don't.

We create electronic letterheads etc for clients, many of them PC users and
find that both onscreen and printed versions are not clear as the artwork they
have been generated with (illustrator). We have been told that Word creates a
different preview of a jpg, thereby losing quality etc. Does anyone have any
ideas, suggestions?
