It is pointed out in setup when you choose which previous versions you want
to keep. It clearly states that only one version of Outlook can be installed
at a time when you select to keep Outlook 2003.
To get Outlook 2003 back go into 2007 setup; uninstall Outlook and install
2003.
Not all add-in vendors/developers have made their add-ins compatible with
Outlook 2007 yet. Contact your vendor/developer about upgrades or testing
their Betas.

I
do not remember seeing anything in the advanced installation options
informing me that Outlok would be the exception to the rule. I'm running
2007 now fairly stably and, no surprise, I like it a lot. But can you tell
me how I would go about getting 2003 back if I decide to do that? In the
alternative, how do I make my InBoxer add-in work with 2007? Or is that a
question for InBoxer?

When installing the 200t beta, I opted to keep all of the 2003
applications.
This occurred in every case except for Outlook 2007, which overwrote
2003.
