Calculation

Apologies for a very simple question - I'm trying to help
my mother by phone to switch her spreadsheet to automatic
calculation (it must be on manual, as none of her formulas
are recalculating).

But I can't seem to direct her to the Options/Calculation
form as I would on a PC. Can someone give me directions?

Excel > Preferences > calculation > automatic.

At least it's right for Excel in OfficeX

As indicated by Harvey, there is no big difference. The
thing you'll have to know is that you won't find
an "Options" item in the "Tools" menu in the recent Mac
Versions of Excel. But you'll find its equivalent:
a "Preferences" item in the "Excel" menu (in Excel v.X) or
in the "Edit" Menu (Excel:2001).
