Calendar Customization

Can someone tell me what is the easiest way to customize the calendar views
of Outlook 2003? We are currently attempting to use the calendar as a
scheduling tool for our field staff, and would like to be able to add
additional fields, etc....

You can't add fields to day/week/month views. For other views, View | Arrange By | Current View | Define Views.
