I had the same exact issue! So, I began using iCal from Apple just to make
sure I do not miss a meeting.
I did as the person suggested below and it works. I turned off the sync
and calendar events do not delete after I enter them on my calendar.
This is very very strange. I would like to sync so my iPhone gets the data.
I will not be able to sync with my iPhone now with it turned off.
Let me just say: if there is anything Apple could do to resolve sync
entourage with iPhone that actually works without creating multiple
entourage folders in iCal etc it would be great. For all the things
Apple does get right I am afraid Apple (and other companies) have not been
able to create a simple workable solution for syncing. It is just a fact.

Can you check to see if you've got sync turned on in Entourage. Go to
prefs sync and see if anything in sync is turned on.
Sync in Entourage can do what you're describing if more than one
module is turned on at a time. I've had this happen. It won't stop
until you do a couple of things that I'll describe if it is turned on.
Let me know. Turn it off and this will stop and once I hear from you
I'll let you know how to safely engage sync.

My calendar events and Tasks are deleting within one minute of me
creating them. It also deleted all of my events that were previously
entered. There are a few that stayed and did not delete. I cannot find
a pattern to determine which stayed and which got deleted. The thing
that i did notice about events that stayed is that they are all All Day
Events. New All Day Events delete.
