Sorry: Not in Office 2008. The updating requires VBA.
Someone may produce an AppleScript to do it, but they have not done so yet.
What I suggest you do is paste the thing into Excel, then create formulas to
update the dates there.
Here's a small example:

All I did there was create a Calendar from the template in Word, paste it
into Excel, then use formulas to make the date cells update dynamically.

In Word 2008, when using the calendar template, are the dates in the boxes
supposed to auto-update when you type in the month and the year above, because
it's not doing it for me and is driving me crazy trying to figure out how to
make it.
