Calender in Outlook 2003

My question is how can a perform a strike-thru off an appointment in my
schedule. I would like to retain the data of the appt but would like to show
that I canceled the event.

Outlook doesn't have that feature. You could create a calendar folder
called Cancelled and move the evet to that calendar, if you wish.

You can't. You could use labels or custom views to 'mark' the items. I'd add
a category of 'completed' or 'cancelled' then a custom view that applies
automatic formatting based on the category.
