Can Category Names be changed in OL 07

How do I change the category names ("Blue", "Green", etc) to say "Family",
"Business", etc?
Is it possible to have, say 10 categories? If so how do I accomplish this?

Do Actions-Categorize-All categories. You can edit them there.

Additionally to Gordon, you can add as many categories as you like. However,
the list, which you see first when you click on the Categorize button, shows
not more than 15 entries. If you're looking for more categories, you have to
click the All Categories button.
