I'd like to be able to copy and paste a set of rows (e.g. rows 1,3,4,5,6,10,12) but I can't figure out if there's a way to select non-adjacent rows at the same time. Any ideas?

Yes, you can, but it depends on your overall objective as to whether you'll
be able to achieve your intended result.

In order to select non-contiguous ranges of cells hold the Command key down
after selecting the first range, then Command+Click or Command+Drag to
select each additional cell or range. In your example;

Click the Row Number for Row 1,
Hold Command while clicking the heading of Row 3,
Hold Command while dragging from the heading of Row 4 to Row 6,
etc.

You can then copy what you've selected, but when you paste the content will
flow into consecutive rows - not separated as it was in the Copy area.

You may also want to explore the options in Edit> Paste Special, such as
Skip Blanks.
