CAN I create a "Booklet" in Word 2003?

An attempt to do so in Publisher 2003--- failed.

The center page/s is--- blank, with NO right-click option on the "Text
Overflow" Icon (on any page) to condense, correct or flow.

Word 2003's "Page Setup/Layout" does not have "booklet' nor "two pages per
sheet???
