Can I mix shapes from different templates?

Is it possible to use shapes from a basic flowchart diagram with shapes from
a work flow diagram? Or use text with a workflow diagram?

In general, yes. The only potential problems may occur when shapes invoke an addon, e.g.
timeline, gantt, org chart and others.

You can mix and match shapes that were installed with Visio. As Paul warns,
there may be a problem with stencils from other flavours of Visio. The other
issue is using newer stencils in older versions of Visio.

Visio has been very good at opening stencils from older versions. I have
opened Visio 1 stencils in Visio 2007 with no problems.

The builtin UML in only in the Professional version of Visio.
There are other 3rd party addons though.
