Can I rotate my text diagonally within a table?

Unfortunately Word doesn't allow you the same functionality as Excel for
formatting table cells.

You could try using WordArt to get a similar effect.

The second WordArt option is diagonal text sloping upwards from left to
right. You can format the WordArt to use the font you want.

WordArt can be turned into an inline graphic which would work well with
table cells. After you've created the WordArt, right click the graphic,
choose Format WordArt and select the Inline with text option from the layout
tab.
