Can I show a projected completion % based on a status date

Can I create a custom field that will show the projected completion % for a
task based on the current status date. This will be used as a comparison
between the actual % complete vs where the project and/or task should be
based on the status date.

Well, yes you can but that type of metric is already embodied in earned
value metrics. Although the value itself is financial, BCWS (budgeted
cost of the work scheduled) is a metric that shows how much value a
given task should have earned by a given date, normally the status date.
The whole point is to be able to compare BCWP (budgeted cost of the work
performed) with BCWS and ACWP (actual cost of the work performed) to
develop the classic SPI and CPI metrics (schedule performance and cost
performance indices respectively).
