Can one rename sheets?

OneNote automatically names "pages" (I mean the lowest "unit" in
OneNote) apparently by trying to recognize the first text entered on a
page. In my case this usually this creates some gibberish, that I find
odd and hard to associate with anything. Can't one somehow rename these
pages? Oddly enough I found not such options, yet. Are we really fully
at the merci of the character recognition here?

The full view of a page shows the page title on top.
Edit that rounded box, and hit enter...

The answer to your question, "Are we really fully at the merci of the
character recognition here?" is NO. You may not have the page title showing.
Select Show Page Title under Format in the main menu. Put in whatever title
you want. If there is none, ON apparently tries to use the 1st line of text
which is the gibberish you refer to.
