Can OneNote Insert Date only, without Time?

Is it possible to use Insert | Date and Time, or a similar function, to
insert only the date? I currently get both time and date and then have to
edit out the time portion.

YES, date only is available. I answered my own question!

Insert Date (only) is available as a button on the Standard toolbar (but
not from the default dropdown menu).

You can also use shortcuts:
Alt+Shift+F - date and time
Alt+Shift+T - time only
Alt+Shift+D - date only
