Can OneNote record/capture text being typed into another App.?

I would like the SideNotes to be able to record text I am typing in other
applications, for example my annotations in Adobe documents or updates to a
database.

OneNote cannot do that. You can cut/paste from these other applications
into OneNote if you want to capture activity there...
