Can you add your own customized headers to document elementtemplates?

Yes, you "can". But you would have to hack the XML yourself.

It's a hell of a lot easier in Word 2007, which has the Document Parts
Manager that we don't have yet.

If you can find a copy of Word 2007, you can use it to edit the Document
Elements file and bring it back to the Mac.
