Can you create form in Excel & text wraps across several columns?

Yes.

Select the cells in question and then

Format, Cells,
select Alignment tab
click the 'Wrap Text' and 'Merge Cells' if necessary

Would suggest to *not* recommend the use of "Merge Cells".

Besides, you cannot automatically "Wrap Text" when "Merge Cells" is enabled.

Better to select the columns in question, then:
<Format> <Cells> <Alignment> tab,
And expand the "Horizontal" box and choose,
"Center Across Selection",
And then, if necessary, click on "Wrap Text",
And then click on the other tabs to assign formats to the selection.
