Can you save a project NOT on the server?

I am new to Project 2007 and am doing some tutorials to gain knowledge. I
need to save the project-but not to the Project Server. How do I do that?
Even if I work offline-I get the same prompt to save the project to the
Project Server and there is no "Save file offline" in my expanded File menu.

When I do a File->Save As->I get the box with the title bar reading "Save to
Project Server" and fields for Name, Type and Calendar. No where can I see
the option to save offline.

I think your are confusing save as file and working offline.

Save to file will save a copy to your local drive (Hard Drive, thumb drive,
network drive, etc)

Work Offline will allow you to take a project that is currently stored on
the project server and work on it offline. This could be for when you are
traveling on an airplane and do nto have connectivity. Once you are back
online you would then reconnect to the server and save the changes back to
the server

Based on your original question though, you would want to use Save as File
since you are trying to save a project but not to the server.

The "Save to Project Server" dialog box also contains a "Save as" option
which is where you want to go to save a file to your local machine. So if you
use "File>Save As you" will still have to again select the "Save as" option
in the "Save to Project Server" dialog box to access the "Save as" dialog box.
