Cant open some ofmy files

Having trouble when trying to open some of my files after updating my cp and updating to office 2003. I get an option in Word and Excel to convert the files and it offers an option in selecting encoding formats(Windows, Ms-Dos or other encoding). But all i get is jibberish. What should i do?
