I found this tip in Help:
"Tip: To change the order of pages, click a page thumbnail in the navigation pane and drag it up or down to another position in the page sequence."
But when I tried it, nothing happened. I got the pointy finger instead of the grabby hand, and it just slid over the thumbnails.
I'm a little frantic because I'm working on an 80 page book with recipes and text, and we won't know what order they're going to be in until we see where things fall vis-a-vis odd versus even pages.
